  • 2 cups romaine, chopped
  • 2 cups spinach
  • 1 can black beans, rinsed
  • 2 cups fresh pineapple chunks
  • 1 English cucumber, diced
  • 1 red bell pepper, diced
  • 1/4 cup red onion, diced
  • 4 tbsp. sunflower seeds
Dressing
  • 1 avocado
  • 1 tbsp. lemon juice
  • 2 tbsp. red wine vinegar
  • 1 tbsp. Dijon mustard
  • 1/2 tsp. dried oregano
  • Salt and pepper, to taste

Instructions
  1. Combine dressing ingredients in blender until smooth. Allow dressing to chill while you prepare the salad ingredients.
  2. Divide the salad ingredients among four bowls.
  3. Top each with desired amount of dressing.
