Black Bean & Corn Stuffed Yams
- 4 Yams Baked (baked in over or microwave)
- 15 oz black beans drained and rinsed
- 1 cup corn
- 3 green onions chopped
- 3/4 cup shredded Cheddar cheese
- 1/2 cup cilantro chopped
- 1 tspn onion salt
- 2 limes juiced
- black pepper to taste
- In a bowl, add all ingredients (expect yams), stir to combine and season with black pepper.
- Slice open hot yams, stuff with bean mixture and sprinkle tops with extra shredded cheese.
