Mushroom & Veggie Chili

Slow Cooker Bacon & Cheddar Pork Chops And Potatoes

Ingredients

 

  • 1 onion diced
  • 2 garlic cloves minced
  • 1 green bell pepper chopped
  • 1 cup corn kernels
  • 1 zucchini diced
  • 8 oz. mushrooms sliced
  • 3 cups diced fresh tomatoes
  • 3 cups cooked kidney or pinto beans
  • 1/2 cup water
  • 2 tbsp. chili powder
  • 2 tsp. cumin
  • 1/2 tsp. oregano
  • cayenne pepper to taste

Instructions

 

  1. Combine all ingredients in a crock pot.
  2. Cover and cook on low for 6-7 hours.
  3. If desired, add cheese to top before serving.
