Mini Corned Beef Sandwiches



  • 15 pieces mini Rye bread
  • 8 slices corned beef, cut in half
  • 1 (8 oz) package cole slaw mix
  • 4 slices Swiss cheese, cut in quarters
  • 2 tablespoons rice wine vinegar
  • Salt and pepper, to taste
  • Thousand Island dressing
  • 15 mini sweet pickles



  1. Preheat oven to 375 degrees
  2. Place bread slices on a cookie sheet
  3. Top bread with 1-2 slices of corned beef and cheese
  4. Place in oven and melt the cheese, about 6-8 minutes
  5. In a small bowl stir to combine cole slaw mix, vinegar, salt and pepper
  6. Add a spoonful of slaw mixture to each sandwich
  7. Drizzle each with dressing, top with pickle
