Greek Cauliflower Bowl


  • 14 oz. cauliflower, riced
  • 1 tbsp. olive oil
  • 2 cups arugula or choice of greens
  • 1/2 cup cherry or grape tomatoes, halved
  • 1 green onion, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup pitted olives, sliced
  • 1/2 cup choice of balsamic dressing
  • 1 cup croutons
  • salt & pepper, to taste


  1. Place cauliflower florets (about ¾ of head) in a food processor and pulse until they are close to the size of rice grains.
  2. Transfer cauliflower to a microwaveable bowl; add olive oil and a pinch of salt and pepper. Microwave on high (covered) for 3 minutes. Let cool. (Pre-packaged bags of steamable cauliflower will work too.)
  3. Divide cooled cauliflower onto 2 plates and top with divided amounts of greens, tomatoes, onions, feta cheese, olives and salt/pepper.
  4. Pour desired amount of dressing on each; add croutons.
