Zucchini Stuffing Casserole

Ingredients

  • 3 zucchini, cut into cubes
  • 1 onion, diced
  • 2 carrots, shredded
  • 1 can corn, drained
  • 3 cloves garlic, minced
  • 1 12 oz. bag stuffing mix
  • 1-2 cups chicken broth
  • 3 tbsp. butter, divided

Instructions

  1. Preheat oven to 425ºF.
  2. Place a sauté pan (oven safe) over medium heat. Add 2 tbsp. butter. Once melted, add onion and zucchini. Cook 5 minutes until the veggies soften. Add the garlic; cook 1 minute.
  3. Add carrots, corn and stuffing. Stir well, then add broth until bread cubes are moistened. Season with salt and pepper to taste.
  4. Melt the remaining tbsp. of butter in a separate dish and drizzle over top.
  5. Place pan in the oven and cook 10-12 minutes, or until stuffing is browned.
