Macaroni Soup


Simple Turkey Meatloaf Minis

Tomato and Macaroni Soup

Serves 6

2 tbsp olive oil

1 medium yellow onion, chopped

1 green bell pepper, chopped

2 cloves garlic, minced

1lb ground beef

2 tsp chili powder

2 tsp dried oregano

2 cans condensed tomato soup

1- 15 ounce can diced tomatoes

32 ounces beef broth

3 Cups water

2-3 cups elbow pasta, uncooked

Heat oil in a large pot. Sauté onions, bell pepper and garlic until the vegetables have softened, about 4-5 minutes.

Add the ground beef and break up while it cooks through. 

Stir in chili powder, oregano and salt/pepper to taste. 

Add soup, tomatoes, broth and water- bring to a boil.

Once boiling, add pasta. Reduce heat, cover and simmer until the pasta is cooked to your liking.
