Mediterranean Tuna Salad

Mediterranean Tuna Salad


  • 1 5 oz can of chunk light tuna in water, partially drained
  • 4 oz portabella mushrooms, sliced
  • 6 oz jar artichoke hearts, diced and drained
  • 1/2 cup pitted Kalamata olives, diced
  • 2 tablespoons basil leaves, chopped
  • 1/2 cup white or mild cheddar cheese, finely shredded
  • 3 tablespoons olive oil
  • 3 tablespoons fresh lemon juice



  1. Combine all of the ingredients in a bowl and season with salt and pepper. Chill until ready to serve.
  2. Serve on a bed of spinach or favorite greens
