Italian Sausage Stew
- 1.5 lbs baking potatoes
- 1 lb smoked Italian or Polish sausage
- 2 cups baby-cut peeled carrots
- 1 envelope onion soup mix
- 1 tbsp olive oil
- 1 tbsp water
- Cut washed potatoes and sausage into bite-size chunks.
- Place potatoes, sausage and carrots into an ungreased 9x13 inch baking dish.
- Toss with soup mix, oil and water.
- Cover pan with foil and roast 30 minutes at 350 °F, stirring after 30 minutes.
